              ETHIOPIA - Suke Quto
This coffee is grown and processed in the Suke Quto region of Ethiopia’s southern Guji Zone, known for consistenly producing top-scoring Ethiopian coffees. Farmers begin by sorting the coffee cherry by hand for defects. The coffee cherry is then floated in tanks of water to seperate any underripe cherry before the onset of processing. In this natural-dry process, the coffee cherry is laid on raised beds to dry for two-three weeks. During this time the coffee is continually turned and sorted for any undesireable coffee.
