This coffee comes from small land holders farmers in the Kebele of Buku Abel, Guji Zone, Ethiopia. The people in this region are known as Guji Oromo and coffee farming is an integral part of their culture and way of life. After harvest, the coffee cherry is meticulously sorted by hand for defects. Unripe coffee is removed by floating cherry in buckets of water and also by hand. The sorting continues on drying tables for the next two - three weeks. Removing unripe cherries is a key step in uniformity and clean cup flavors in the final stages of coffee brewing.
